Floral summery flowers are backed by sweet plum and a distinct marzipan touch. Empirical's The Plum, I Suppose doesn't fit into a spirit genre, rather, it's a flavour experience that to us, conjures a sense of falling blossom trees.

Their use of kernels lends the noticeable bitter almond marzipan flavours while distilled marigold kombucha brings a new dimention to and tannic notes reminiscent of plum skins. Serve with tonic or soda.

About this product

It is made by distilling a combination of pearl barley, pilsner malt and koji, and using dried plum kernels and marigolds as botanicals.

Lars Williams and Mark Emil Hermansen founded Empirical in 2017 with the deliberate intention to not pay any attention to the conventional categories that traditionalists often want to cast spirits into.

Empirical is a flavour company whose distillery is based in a Copenhagen warehouse. It's a complex space featuring custom-built machinery, hybrid fermentation techniques, augmented low-temperature distillation in a sea of machines, tanks and tools.
