Waxy green herbs on the nose are joined by a bright pinch of pepper. It is soft to taste, where pine meets orange meets herbal and savoury seaweed and fennel before finding the floral pink pepper spice and into tonka's unique gourmand profile.
Distilled to a London Dry method, in a copper pot still. The 13 botanicals include: juniper, lime peel, bitter orange peel, lulo, sakura, tonka, pink pepper, dulse, kelp, sea fennel and more.
Recipe development began in Greenwich, with tests and iterations done in the founder's home, but it has since been scaled up and is now produced in collaboration with the team at Annon Distillery.
Greenwich Gin was launched in 2021 by Gonzalo Ruiz who wanted his gin to reflect his life experience having lived in 8 different countries and gained 5 nationalities.
