Once distilled, Novo Fogo age their Organic Cachaça distillate in 53-gallon American oak bourbon barrels that have been taken apart, sanded, and re-toasted. The 2-3 year process takes place in the heat and humidity of their rainforest home.
Founded by Dragos Axinte, Novo Fogo is an authentic Brazilian producer focused on transparency and highlighting the wealth of native assets that the rainforest has to offer in a bid to make unique flavours while helping conservation efforts.
Novo Fogo cachaça is made in the town of Morretes, Parana State. It is situated by the Atlantic Rainforest, where the distillery focusses its conservation efforts (e.g. using indigenous Brazilian woods to showcase their endangered status).
Part of the distillery's "Two Woods" series, Novo Fogo Tanager Cachaça has been matured in American oak barrels and finished in Brazilian zebrawood. A uniquely flavoursome combination!
