A powerful juniper led nose, with forest floor notes coming through with cracked black pepper. To taste the juniper presents itself nicely alongside dark fruits and pink pepper. Add a twist of orange in a G&T.
There are seven botanicals used, including pink peppercorn, cubeb, fresh lemon peel, juniper and coriander seed. They are placed in small traditional copper alembic stills, and distilled together to a London Dry method.
Seven Crofts was co-founded by Helen Chalmers (who oversees distilling duties) and Robert Hicks. They began to develop the idea in 2017 and after eighteen months of experimenting and 96 recipes, Seven Crofts was born.
The Highland Liquor Co is named after (and based in) the original seven private dwellings that made up the fishing station planned on the shores of Loch Broom in 1791 (now Ullapool).
