Botanivore Gin, the “botanical eater” as it's lovingly known, is comprised of 19 different botanicals working in concert. Think of a meadow in bloom—herbaceous, fresh, and elegant.

Bergamot and orange burst up top before the huge herbal soul of bay laurel, cilantro, coriander seed and dill take over. Black peppercorn, caraway, fennel seed, and star anise add deep complexity to the finish. Garnish with an orange peel in a G&T.

16 ingredients are steeped overnight in the pot of their 1,500-liter copper pot still, and before distillation St George layer juniper berries, bay laurel and fresh cilantro into a botanical basket.

St. George Spirits was founded in 1982 by Jörg Rupf, who travelled to the USA as Germany's youngest judge on assignment from the Ministry of Culture. It's now headed up by Lance Winters, one the rare few who treat distilling as an art form.

Based in a former Naval Air Station in Alameda, California St George is a 65,000-square-foot hangar with a spectacular tasting room, laboratory, and a lineup of some the most beautiful copper stills in the industry.
