Starward Solera is made with Australian malted barley before maturing in Apera barrels (an Aussie fortified wine similar to Sherry) which have often held spirit over decades – this gives a rich, spicy and jammy fruit finish.

The majority of the Apera casks are sourced from McWilliams Winery, right on the border between Victoria and New South Wales. The Starward team re-cooper, shave and char the barrels before filling them.

About this product

Ripe orchard fruits are clear on the nose (apple / pear) with vinous dried fruit (raisins and dried figs) following. Caramel, vanilla and marzipan join the chorus with a toasty caramel, creme brulee and nutty oak to finish. Delicious!

Founded by Melburnian David Vitale, whose passion for all things food and flavour is partly from having grown up in a big Italian family. Under the guidance of whisky godfather Bill Lark, he helped kickstart the Australian single malt movement.

Made in Melbourne where the team say ‘elemental maturation’ happens. The wildly unpredictable (four seasons in a day) and fluctuating climate enables the whisky to draw out fruity flavours and oaky character from the barrels over a 3 year period.
