Expect aromas of overripe bananas with hints of nutty maple breakfast, while to taste juicier tones emerge along with wood spice, citrus and stone fruits running through the centre.
The liquid is made with sugarcane juice harvested from Vietnam, which creates a highly aromatic and floral rum post-distillation. It has been blended with a pot still rum from Ghana and a molasses-based rum from the Philippines.
Elizabeth Yard is made by Edinburgh based Holyrood Distillery, with the aim of featuring rums from some of the most prestigious producers in the world and further explore maturation and cask finishes.
Royal Elizabeth Yard was built in 1946 in West Lothian and was a Royal Naval Victualling Depot. Unit 9, where today they keep our casks, was the former rum store for the fleet’s daily rum ration and why the team sought to revive its heritage.
In 2021 Holyrood Distillery returned rum maturation to Elizabeth Yard by importing small parcels of rum sourced from across the rum world. This beauty from Diamond Distillery in Guyana is pure class.
