Given the emphasis on the botanical, it's no surprise that this is pine forward juniper centric gin. The rosehip is magical though, adding soft florals and a freshness to the ensemble. Garnish with an orange zest in a G&T.
The gin uses juniper and rosehip from the ancient Highland pine forests, which are macerated in a wheat spirit and distilled in a Copper Pot still. As each batch varies, they then blend multiple batches together to ensure consistency.
Having already dabbled in the drinks industry by creating a vodka, Crossbill Gin was founded by architect Jonathan Engels and his business partners in 2014 in Inshriach Distillery near Aviemore.
Named after the Scottish bird, Crossbill was initially distilled in Aviemore, the distillery relocated to the legendary Barras in Glasgow’s East End. They are best known for their dedication to using 100% Scottish botanicals.
