Who created Aperol?

The Barbieri brothers, Luigi and Silvio, were the masterminds behind the creation of Aperol. Born into a family of vintners in the Veneto region of Italy, they inherited their father's liqueur company in 1912.

Fuelled by their passion for mixology and their entrepreneurial spirit, they worked meticulously to create a light, refreshing aperitif. Their efforts culminated in 1919 when they unveiled Aperol at the Padua International Fair.

How is Aperol Made?

Aperol is an infusion of bitter and sweet oranges, rhubarb, quinine and gentian alongside many other herbs and roots. This blend is steeped in a neutral spirit base for a period, then filtered. Once the infusion is ready, it is sweetened with sugar and cut with demineralised water to bottling strength.

The exact recipe is a well-guarded secret, known only to a select few, ensuring the consistency and distinctive character of Aperol.

The Aperol Spritz is everywhere, but the drink’s popularity isn’t an overnight sensation, even if it may feel that way. It’s been slowly rising up the radar since 2017, when it was first touted as the next ‘big thing’. Clever marketing campaigns, yes – but it looks good, tastes good and it’s easy to make… What more can you want?

Can you use Aperol in a Negroni?

Yes, Aperol can be used in a Negroni. Traditionally, a Negroni is made with equal parts gin, vermouth and Campari. However, substituting Campari with Aperol creates a lighter, less bitter variation of the classic cocktail.

If you do, why not also play with the other parts too? Floral gins work well as part of the mix, while rosé vermouths can also be harnessed in the trio to fantastic effect.

What’s the difference between Campari vs Aperol?

Campari and Aperol are both Italian aperitifs, but they differ in taste, colour and alcohol content. Campari is more bitter, with a bold bitter citrus flavour profile, while Aperol is sweeter and lighter overall.

The alcohol content of Campari is also higher, around 25%, compared to Aperol's 11%. Both are used in various cocktails, but Campari is traditionally used in a Negroni, while Aperol is famous for the Aperol Spritz.
