Helena is a spirit with subtle nutty aromas (think almond butter, soft vanilla) and a delicate sweet barley character - this is a spirit that defies convention in all the right ways.

Helena is bright, clean and floral overall. The koji they use provides a signature sweet, umami and floral note that's best suited to a long drink made with iced green tea and lemon verbena as a garnish.

Helena is a double fermented clear koji spirit. Made from barley koji, pilsner malt, and Belgian Saison yeast, this product blends Eastern and Western fermentation methods

Lars Williams and Mark Emil Hermansen founded Empirical in 2017 with the deliberate intention to not pay any attention to the conventional categories that traditionalists often want to cast spirits into.

Empirical is a flavour company whose distillery is based in a Copenhagen warehouse. It's a complex space featuring custom-built machinery, hybrid fermentation techniques, augmented low-temperature distillation in a sea of machines, tanks and tools.
