About this product

Fermentation takes place without skins in mid-October, straight after the harvest. A secondary slow fermentation to give the wine its distinctive perlage takes place in large sealed tanks, at a low temperature between 13-15°C.

With a long history deeply-rooted in Prosecco's 'Golden Triangle', the descendants of Paolo Bisol continue his legacy of tenacity and determination to seek out the best-quality grapes while cementing relationships with over a hundred local growers.

From the rolling North East Italian hills throughout the Valdobbiadene region and neighbouring municipalities. Harvesting is carried out by hand, a truly heroic task on these vineyards situated on such steep hillsides.
